Abstract

Tea obtained from Camellia sinensis(L.) is one of the most ancient and most widely consumed non-alcoholic beverages worldwide. The major tea catechins are (-)-epigallocatechin gallate. Many factosr can constitute important influences on the composition of tea, such as species, season, age of the leaf, climate, and horticultural practices (soil, water, minerals, fertilizers). The purpose of the present study is to establish the influence of leaf age on the consentration of EGCG and to determine leaf age which provides the higest consentration of EGCG. The samples of tea leaf (Camellia sinensis) are divided into 3 group : top leaf, middle leaf, and bottom leaf. Top leaf is 1st leaf from the top, middle leaf are 2nd to 4th leaf from the top, and bottom leaf is 5th leaf from the top. Then, the consentration of EGCG to determined using HPLC. The result of the analysis are % EGCG consentration in top leaf is 1,94 % ± 0,02 %, % EGCG consentration in the middle leaf is 5,68 % ± 0,05%, and % EGCG consentration in bottom leaf is 4,08 % ± 0,08 %. This study showed the relationship between the age of tea leaf on the relative concentrations of EGCG. The higest concentration of EGCG is in the middle leaf. According to the results, we suggest the study can be used for industry to choose proper basic material from tea leaf to obtain the best quality tea products.
