Abstract

The purpose of this study was to determine the level of bacterial contamination on beef sold at wet- and supermarkets in Surabaya. The method used in this study was Total Plate Count (TPC). Twenty samples of beef shank were bought from five meat salers at five wet markets and five supermarkets. The datas were analyzed by t-test to distinguished between wet- and supermarkets. Although the average TPC of beef sold at supermarkets was 9,7 x 105 CFU/g sample, higher than beef sold at wet markets about 5,6 x 105 CFU/g sample, the statistic analysis showed no significantly different.
