Abstract

Rambak chips are a snack that comes from raw material cowhide or buffalo. Produced rambak chips Factory X in the Village District of Hove Ringinagung Magetan uses raw materials at the stage of tanning with chromium that is useful to facilitate the separation of skin layers. The purpose of this study to know the content of chromium in the rambak chips and the health grievance of the consumer. This study is an observational descriptive cross sectional study. The experiment was conducted in October 2013 to June 2014 by using the research instruments such as questionnaires, interview guides, observation and measurement list. The number of samples using a total population of 10 people The results of examination of chromium content in the rambak chips of 5.302 mg / kg which indicates the content exceeds the value required by Disnak is 0%. Test results on 10 samples of urine chromium entirely not exceed the normal rate of 2-3 mg/L (Depkes). Subjective health grievance that appears most are headache, fatigue, dizziness, and dermal grievance that is felt by the consumer 8. The conclusion that can be drawn is that it contains chromium in the rambak chips, while the chromium content in the urine does not exceed the normal rate with frequent health grievance are headache, fatigue, dizziness, and dermal grievance. Advice for manufacturers should to periodic checks on the quality of the rambak chips cooperation with the Department of Health and Local Government to issue regulations limit the heavy metals chromium contamination in food.
