Abstract

The modern diet transition, like high fat and low fiber has trigerred the increasing of coronary heart disease (CHD) prevalence. Healthy snack that contain high fiber can be as an alternative to prevent this disease. Pineapple fruit leather is one choice of this alternate healthy snack. Fiber content in fruit leather can be improved by adding banana peel because of fiber and flavonoid contents is high. The purpose of this study was to knows the effect of substitution Agung Banana Peel to acceptance, nutrient, and economic value pineapple fruit leather. The type of this study was true experiment on the processing stage with Completely Randomized Design (RAL) and 6 replication, continued by organoleptic test using quasi experiment with 6 formulas in the first experiment and 4 formulas in the second experiment. Total of panelist were 4 peoples in the first experiment and 30 peoples in second experiment. Technique of analysis used descriptive analysis and statistical analysis to know difference acceptance with use Friedman Test and Wilcoxon Sign Rank Test at α=0,05. Fruit leather organoleptic test results in the formulas treatment are, F1 (20% banana peel) is most favored treatment with category like, while the least favored is F4 (50% banana peel) with category dislike. Based on calculation DKBM and literature in one portion of fruit leather, the highest fiber content was F4 (4,28 g) while the lowest was F0 (1,40 g). The highest flavonoid content was F4 (53,08 mg) while the lowest was F0 (6,16 mg). Based on laboratory results, fiber content of the best treatment (F2) is 1,67 g per portion and flavonoid show negative result. F2 fruit leather with 30% banana peel substitution was the optimum formula that can be used an alternative healthy snack to prevent CHD.
