Abstract

There are some obstacles in order to control "Iodine Deficiency Disorders" by using iodized salt. The decreasing of iodine content is one of them. It occurs when the products are kept in the producer, distributor or customer. The research's objects were to find out the effect of place of storage of salt on the stability of iodized salt and where did the best place to store iodized salt. This research used the eksperimental method. Salt sample was taken at random from distributor. This salt kept and measured the yodat rate using titration iodometri method before and after kept during 4 weeks. Stuff to keep the salt such as toples open plastic ( A), packaging of open plastic ( B), toples open plastic in refrigerator ( C), packaging of open plastic in refrigerator ( D) and toples plastic is closed ( E). Data was analysed by using paired sample t test and one way anova. Iodine content was decreasing when we store the longer but still qualify its standards (>_ 30 ppm). The highest degradation after treatment B ( kept at packaging of open plastic) that was 13,83% and degradation of lowest yodat rate that were after treatment E ( kept at toples plastic is closed) that was 1,16%. At paired sample t test show there are difference before and after treatment A and B (p<0,05) and with one way anova test shows there are difference every treatment with p= 0,02 (p<0,05). It can be concluded influence of place storage of salt on the stability of iodized salt. Place that is most stable that is toples plastic is closed, then toples open plastic in refrigerator, followed packaging of open plastic in refrigerator, toples open plastic, and packaging of open plastic.
