Abstract

Daging remis mengandung . asam aspartat, threonin, serin, a5am glutamat, proiin, glisin, alanin. sistein, vallo, isoleusin, leusin, tirosin, pheniJalanin, lisin. histidin, argmin, dan metionin. 2. Kadar masing-masing asam amino yang terdapat dalam daging mmis adalah : a5am aspartal 1,6749%., threon!n 1,0998%, serin 0,7725%!, gIutamin 2,1460%, alanin 0,8192%, sistein 0,0376%, valin O,83J 1%, glysin 0,7636%, metionin 0,0049%, lsoleusin 0,7304%, leusin 1,0995%, tyros!n 0,5575%, phenil alanin O,6651OJ..}, lysin 1,1146%, Histidin 0,353%, arginin 1,4337%, prohn 0,8111%. Sedangkan kadar total asam amino tersebut adalah l4,9095% (dalam sampel bentuk basah)
