Abstract

This study compare the effect of combination polymer alginategelatine (1.75 : 0.75)% and (2.5 : 0)% on the characteristic of nisinmicrospheres. Nisin-microspheres were made by ionotropic gelation method with aerosolization technique using sodium alginate and gelatine as polymer and calcium chloride (CaCl2) as crosslinker. The type of alginate and gelatine used in this study were low viscosity alginate and type B gelatine. Microspheres formed were resuspended into lyoprotectant maltodextrin solution and were dried using feeze-dryer. The result of microspheres’ e aluation includes examination of FTIR, x-ray diffraction (XRD), Scanning Electronic Microscope (SEM), particle size distribution using optical microscopy, yield (rendemen), moisture content, and swelling index. The microspheres’ size showed the diameter size of particle was below 10 μm therefore able to penetrate in the Peyer’s patches. The result of yield, particle size distribution and swelling index profile examination was influenced by the presence of gelatine as combination polymer, but there is no effect on moisture content. And from the swelling index profile of each formula could indicate that nisin-microspheres alginate-gelatine (1.75 : 0.75)% capable to release active ingredients in longer time than nisin-microspheres alginate-gelatine (2.5 : 0)%.
