Abstract

Phytosterols in cowpea (Vigna unguiculata (L.) Walp.) were analyzed by gas chromatography. Individual contents of β-sitosterol, stigmasterol and campesterol in fresh and cooked (boiling, steaming, deep-frying, roasting and grilling) were extracted using n-hexane, acetone and hydrolyzed with chloric acid then extracted the samples with chloroform. The extracts were determined and compared by statistical analysis Minitab and SPSS. The results showed that the phytosterol composition in various treatment are different. The best method showed that boiling contained of β-sitosterol, stigmasterol and there is no cholesterol composition.
