Abstract

Microparticle was efficient method to protect probiotic bacteria from extreme conditions. Microencapsulation using suitable technique and matrix can keeps the probiotics active through the gastrointestinal tract and release them in their target organ. Lactobacillus casei was made into microparticle by spray drying method in air inlet temperature 120 °C with three different concentration of methacrylic acid copolymer L type. Three different formulas were named formula I, formula II, formula III with 0,5%; 0,75%; and 1,0% concentration of matrix. Physical characteristic and protection test were performed in all formula. The result showed that microparticles have unspherical shape, wrinkle, but non-porous. The particle size increased but moisture content decreased with increasing methacrylic acid copolymer L type concentration. Protection of probiotic microparticles increased with increasing methacrylic acid copolymer L type concentration but statistically, no significant difference showed between each formula with other formulas (p>0,05)
