Abstract

Beef is one of the preferred sources of animal protein because it taste. The security of beef need to ensure people to get safety beef. One of the stages that determine the quality and safety of beef is in beef abbatoir. Handling of beef in not good and not hygiene abbatoir can lead contamination of bacterial. One of the bacteria that can contaminate beef is Escherichia coli. Escherichia coli has been used as an indicator of hygiene sanitary in food processing industries. Lack of hygiene and sanitation level in Pare Kediri abbatoir can cause contamination of Escherichia coli on beef. Most Probable Number method is quite sensitive and can detect Escherichia coli in very low amount. This study was aimed to know the level of Most Probable Number (MPN) of Escherichia coli in an abbatoir. Thirty beef samples used in this study were taken from Pare Kediri abbatoir. The result showed that all of beef samples (100%) were contaminated with Escherichia coli, which were 29 samples (96,7%) exceeding the limit of the level of MPN according to Standard National Indonesia (SNI) 01-7388-2009. Improvement of hygiene and sanitation in Pare Kediri abbatoir needs to avoid bacterial contamination.
