Abstract

Borax is often misused on certain food product such as fish crackers to make it more crispy. The determination of borax in fish crackers is therefore very necessary. Visible spectrophotometric method with curcumin as a reagent has been used for determination of borax in the present study because this method is more sensitive than the others. Before doing validation, optimization of method to find the optimum condition was carried out firstly. The optimum condition of spectrophotometric method was performed in the wavelength of 547 nm. To reach the complete reaction, it was needed 1 ml solution of 0,125 % curcumin and 1 ml mixture of glacial acetic acid and concentrated sulfuric acid (1 : 1). The absorbance was observed until 70 minutes. In that condition, the equation of regression was y = 1,3127x – 0,0994; r = 0,9690 (p = 0,007; p < 0,01) and Vx0 = 15,53 %. The limits of detection and quantitation were found to be 0,0249 ppm and 0,0754 ppm respectively, while the accuracy gave average recovery of 50,13 % and the precision gave variation coefficient (CV) of 1,39 %. The determination of borax in fish crackers was carried out in three samples which taken from three sellers in Kenjeran, Surabaya. The result showed that all of these three samples were negative of borax.
