Abstract

Sodium benzoate is often used as a preservative of f ood and beverages. The Ministry of Health of the Republic of Indonesia concerning preservatives sodium benzoat permitted in soft drinks is 600 mg / kg. So that people using the preservatives safe and effective, it need s quantitative analysis monitoring by using the appropriate method. The aim of this study was to determine the levels of sodium benzoate in carbonated soft dr inks by using a vali dated method HPLC. A good resolution, reproducible, and accurate method for determination sodium benzoate in carbonated soft drinks has been done. Using LiChrospher RP18 column, mixture of methanol : buffer phosphat pH 4 (60:40 v/v) as mobile phase with flow rate 1.0 ml/min, detection was performed at 225.8 nm by DAD. Good linear relationship r = 0.9998 and y = 73.5522 x + 32.3962. Good precision of instrument was CV=0.58 % and Good precision of method was CV=1.54 % . Sodium benzoate recovery was 100.17 %. Concentration - average of sodium benz oate in carbonated soft drinks was 52.93 ppm or 13.23 mg in 250 ml soft drink “X”.
