Abstract

Microencapsulation using suitable technique and matrices was one of the newest and highly efficient methods to increase viability of probiotic bacteria. Lactobacillus spp. in fermented skim milk (15% b/v) was made into microparticle by spray drying method in 110oC inlet temperature with four different content of HPMC K100LV matrices. Four different formula used HPMC K100LV 0%, 0,1%, 0,2% and 0,3% recpectively as a matrices of microparticle. Physical characteristic evaluation and viability test were performed in all formula. The result showed that microparticle morphology in all formula have spherical shape with different roughness surface. The particle size and moisture content of microparticle increased with increasing HPMC K100LV. Viability test in all formula was performed in two different conditions to know viability Lactobacillus spp. under spray drying process and simulated pH gastrointestinal tract condition. The result showed the highest viability under spray drying process was obtained by formula IV with 80,83 ± 0,14% viability that significant diffferent with other formulas (p<0,05) and the highest viability under simulated pH GI tract conditions was obtained by formula III with 65,83 ± 0,86% viability that significant diffferent with other formulas (p<0,05).
