Abstract
This study aimed to determine the effectiveness of ozone in inhibiting cell damage and flavonoid level on red betel leaf (Piper crocatum Ruiz & Pav.). It was conducted by exposing to red betel leaves (Piper crocatum Ruiz & Pav.) with ozone. The exposure happened in two techniques: through air and water, and in four flow durations: 120 seconds, 240 seconds, 360 seconds, and 480 seconds. Cell damages were detected through the organoleptic test. The changes on organoleptic properties followed by mass loss occurs due to evaporation for balancing the temperature between the inner leaves system and the external environment. However, the flavonoid level test was performed through the UV-Vis spectrophotometry method. The organoleptic shows that every technic and durations gives a different result. The best organoleptic comes from 240 seconds flow duration and exposure through water. The flavonoid level shows that every technic and duration gives different result. The highest flavonoid level comes from 240 seconds flow duration and exposure through water, which is (48,69 ± 0,48) mg QE / g. These result show that the most effective treatment to inhibit cell damage and flavonoid level of red betel leaf (Piper crocatum Ruiz & Pav.) is ozone exposure through water with 240 seconds flow duration.
