Abstract
The number of incidence of diarrhea can not be ignored. One of the preventive measures are developed probiotic products. Fatty acids is one of the constituent cells of bacteria. The purpose of this study is to determine the fatty profile of probiotic bacteria and to determine the inhibition of probiotic bacteria against diarrhea-causing bacteria. In this study, probiotic bacteria used Lactococcus lactis and Streptococus thermopilus while the diarrhea-causing bacteria used Escherichia coli. Analysis of fatty acids preferably using GC-MS. Therefore, fatty acids need to be derivatized into volatile compounds by the reaction of fatty acid methyl esters (FAME) comprising harvesting, saponification, methylation, extraction, and clean up. The result showed there are 4 types of fatty acids in Lactococcus lactis and there are 10 types of fatty acids in Streptococus thermopilus were identified. The result of the other study found that inhibition zone diameter of Streptococus thermopilus greater than the Lactococcus lactis. It shows that the Streptococus thermopilus has greater activity against Escherichia coli than Lactococcus lactis
