Abstract

"Spirulina platensis is a type of cyanobacteria or bacteria that contains chlorophyll and can act as organisms that can carry out photosynthesis to make their own food without the help of other parties. Spirunia contains high phycocyanin pigments so it has a blue-green color. Phycocyanin is one of the pigments derived from Spirulina platensis, and has a very important role in the photosynthesis process as a pigment or a place to receive light. Based on the existing basic colors, blue is an attractive color when used as a natural colorant in food and cosmetics. Spirulina has other uses apart from pigments that can be used as natural dyes, which is that it has a high protein value. Spirulina platensis contains high protein around 55-70%. In this study, the fortification of the blue pigment phycocyanin from the microalga Spirulina platnesis in carbonated soft drinks (soda) consists of raw materials that are harmless and safe for consumption. Fortification is adding or increasing certain nutrients to food to improve food quality. The results obtained from this study are the value of protein content ranging from 3.17 to 5.87 g. with the largest yield at a concentration of 7% with a total of 5.87 g, and the largest yield at a concentration of 0% (Control) with a total of 3.17 g protein. The antioxidant activity in carbonated soft drinks has a value of about 5.71 – 96.21 ppm, with the highest result being at a concentration of 0% with a value of 96.21 ppm and the lowest result being at a concentration of 7% with a value of 5.71 ppm. Test results pH shows various values from 3.11 – 6.14. The lowest yield was at a concentration of 1% with a value of 3.11 and the highest yield was at a concentration of 0% with a value of 6.14. The total phycocyanin ranged from 0.122 - 116.04 mg/ml, with the largest yield at a concentration of 7% with a total of 116.04 mg/ml and the smallest yield at 0% concentration with a total phycocyanin around 0.122 mg/ml. The color content produced at a wavelength of 615 nm has various results from 0.122 to 1.258. The lowest results were found at a concentration of 0% with a color value of 0.122 and the highest results were found at a concentration of 7% with a color value of 1.258. "
