Abstract

Gelatin is a protein, obtained by hydrolysis of collagen from animal skin and bones. Gelatin has many benefits in food, nonfood and pharmacy industry. The extraction of gelatin from fishbone is a positive untilisation of fish processing waste to give economic value, as well as an alternative to produce halal gelatin. In this research, gelatin has been extracted from Manyung (Arius thalassinus) fishbone waste using acid process (Type A). Some acid soaking solution is HCl 4% for 24 hours next HCl 4% for 24 hours and HCl 4% for 24 hours next H3PO4 4% for 24 hours, at temperature of 70ºC and 80ºC, and extraction time of 5 and 6 hours. Characterization of physico-chemical properties were tested by FT-IR, gelatin yield, water content, and ash content. FTIR analysis showed that the results of all the treatments have a wavenumber absorption peaks which confirm with the amide A, amide B, amide I, II, and III group, which were typical gelatin group. The result show that extraction condition with HCl 4% for 24 hours and then H3PO4 4% for 24 hours, temperature and time extraction is 80ºC and 6 hours resulted the best gelatin yield is 3.70±1.83%, water content 14.83±1.32%, and ash content 3.32±0.96%.
