Abstract
This study was aimed to determine effectiveness of honey and noni juice (Morinda citrifolia) as an antibacterial against Escherichia coli on chicken carcasses. There were two methods used in this research, such as Most Probable Number (MPN) to calculate the number of Escherichia coli and sensitivity test Difusy Agar Kirby Bauer that produces clear inhibition zone of the area around the paper disc. This research consists of 6 treatments (P0, P1, P2, P3, P4 and P5) with 5 replications. P0 as the control, P1 contains of honey, P2 contains of noni juice, P3 contains both honey and noni juice in the ratio 1:1, P4 contains both honey and noni juice in the ratio 1:2 and P5 contains both honey and noni juice in the ratio 2:1. The data were analyzed using Analisis of Variant (Anova). The results showed that P1 gave the greatest defference among all treatments. It could be concluded that the addition of honey as an antibacterial potency against was more effective to Escherichia coli than noni juice on chicken carcasses.
