Abstract

This research aims to determine the content of crude protein and crude fiber in jackfruit peel which has been fermented with probiotic as an alternative feed for livestock. This research used commercial probiotic, by the name of product “Effective Microorganism-4 (EM-4)”. The contains of EM-4 is Lactobacillus casei, Saccharomyces cerevisiae and Rhodopseudomonas palustris. The materials used in this research were 1 kilograms dried jackfruit peel and probiotic liquid. Research was conducted according to completely randomized design, consisted of 4 treatments and 5 replications for each treatment. The treatments were P0 = 20 grams jackfruit peel without fermentation (control); P1 = 20 grams jackfruit peel with 2% probiotic (0,4 ml); P2 = 20 grams jackfruit peel with 4% probiotic (0,8 ml); p3 = 20 grams jackfruit peel with 6% probiotic (1,2 ml). This fermentation treatment has been done in seven days. Then the crude protein and crude fiber content were analyzed. The result of this experiment indicated that probiotic in jackfruit peel fermentation significantly effected crude protein of jackfruit peel and have significant effect on crude fiber. Research result showed that treatment on jackfruit peel fermentation give significant impact (p<0,05) to the crude protein and crude fiber.
