Abstract
Trans Fatty Acid (TFA) is a kind of dangerous fatty acid because it can increase Low Density Lipoprotein (LDL) cholesterol level in blood. TFA formed through partial hydrogenation of unsaturated fatty acid in which could be found in margarine and shortening production process. TFA from margarine and shortening given to 25 male rats (Rattus norvegicus) by peroral in 5 treatments for 8 weeks. In first treatment, water and standard foods were given to rats (P0). The other treatments were done in the same manner as the first treatment but 1.2 g margarine was added in the second treatment (P1), 1.8 g margarine was added in the third one (P2) , 1.2 g shorthening was added in the fourth treatment (P3), and 1.8 g shorthening was added in the fifth treatment (P4). Blood sampling were collected at day 57 through intracardiac blood collection method to examine LDL cholesterol level. The result shows that margarine and shortening didn’t give significant differences in increasing LDL cholesterol level (p>0.05).
