Abstract
Penelitian ini bertujuan untuk mengidentifikasi waste yang terjadi pada proses produksi tepung agar-agar di PT. Indoflora Cipta Mandiri dengan menggunakan konsep lean manufacturing. Penelitian ini menggunakan pendekatan kualitatif. Tools yang digunakan pada penelitian ini adalah value stream analysis tolls dan diagram fishbone. Waste di kelompokan kedalan tujuh jenis waste. Dari hasil penelitian didapatkan tiga waste yang paling dominan terjadi yaitu defect, waiting, dan process. Dari hasil perhitungan value stream analysis tools maka di digunakan dua tools dengan nilai tertinggi yaitu process activity mapping dan supply chain respon matrix. Dari hasil penelitian ini maka diketahui bahwa dalam produksi tepung agar-agar PT. Indoflora Cipta Mandiri masih terdapat waste terutama pada beberapa lini produksi. Peneliti juga merancang usulan perbaikan yang sesuai dan tepat dalam upaya mengeliminasi terjadinya waste di dalam proses produksi tepung agar-agar PT. Indoflora Cipta Mandiri.
