Abstract

Good Manufacturing Prcctices desctibes the requirements that must be done by the domestic industry at the whole production chain frcm raw materials to final prcduct. Fishery products are contributor of food poisoning cause in national. One of processed fishery prcducts are crackers. "Deni Deva" is one bmnd of processed cruckers trcm marine Products in the Center ot Marine Products of Small and Medium Euslnesses, Sukolilo, Surabaya. The study design Was observational descriptive. The purpose of this study was to identity the imptementation of Good Manufacturing Pructices in the manutacture ot the processed crackers frcm marine prcducts undet the brand Deva".Selected crackers are sea cucumber crackers. The process "Deni of making sea cucumbers crackers with brund "Deni - not been apprcpriately implementing (eight) aspects of Good Manufacturing Practices,is evident from the results of the assessment states that the implemenlation of Good Manufacturing Practices in the production of sea cucumber cracker catego zed bad (53.02yo).
