Abstract

Antimicrobial or antibiotic drugs have been used in poultry industry for more than five decades. Tetracycline is one of the antibiotics which is a natural producs from Streptomyces sp., identical synthetic products, or similar semi synthetic products. The using of antibiotics is for inhibit the growth of microorganisms or destroy microorganisms. In veterinary medicine antibiotics are used for therapeutic, prophylactic, metaphylactic and nutritive purposes. Tetracycline is one of the antibiotic used in an effort to improve the health of livestock, especially in disease treatment. The presence residues of antibiotics or their metabolites in food is potentially hazardous for human health as it may cause allergic reactions in people and antibiotic resistance in pathogenic microorganisms. In addition antibiotics may influence starter cultures in food industry and lead to economic damage. This study aims to determine residual tetracycline antibiotics in broiler chicken meat in the traditional market of Surabaya. The sample of this research is chicken thigh meat which are sold in traditional market in the area of Center Surabaya, West Surabaya, East Surabaya, North Surabaya and South Surabaya. Then performed an antibiotic residue analysis using Bioassay method in Laboratory of Veterinary Health Public, Faculty of Veterinary Medicine, Airlangga University. The results of this study indicate that there is a small amount residue of antibiotics in broiler chicken in Surabaya City but still safe for human consumption. Therefore the result of the presence of antibiotics in broiler meat indicates that the product is safe for human consumption based on chemical risks.
