Abstract

Lactobacillus acidophilus FNCC-0051 and Lactobacillus plantarum FNCC-0027 have been reported as antifungal metabolites producing probiotics. These probiotics were combined with tomato paste to asses the anti-fungal activity against Candida albicans.The aim of the study was to investigate effect of the tomato paste against growth inhibitory activity of the probiotics in both single and mixed culture at several concentration ratios against Candida albicans. The result showed that each probiotic and its combination (1:1) could inhibit the growth of Candida albicans. The L. acidophilus FNCC-0051 and L. plantarum FNCC-0027 in mixed culture (1:1) added by 0.25% (m/v) aqueous tomato paste at several ratios have no influence to the inhibition activity of the probiotics mixed culture.
