Abstract

Lactobacillus acidophilus in fermented milk was made into micro particle with HPMC K100LV by Spray Drying Method. Four different formula were prepared. Formula I (FI) without HPMC K100LV then the other FII, FIII, and FIV used HPMC K100LV 0,5%, 1% and 1,5% respectively. Physical evaluation, viability test and inhibitory activity against Salmonella typhimurium ATCC 14028 were performed to all formula. The result show that micro particle have spherical and rough form. The particle size of all formula were varied in the range 2.5-15μm. The highest viability of Lactobacillus acidophilus under spray drying process obtained from FIII 88.34±1.01%, but from the statistical test show FIII was not significant different with FIV (p>0.05). While the highest viability of Lactobacillus acidophilus in the gastrointestinal tract condition obtained from FIII 65.81±2.68% and significant different with other formula include probiotic milk (p<0.05). The highest inhibitory activity against Salmonella typhimurium ATCC 14028 produced by FIV 13.6±0.00mm, but from statistical test show FIV was not significant different (p>0.05) from the FII and FIII. It shown that increased the concentration of HPMC K100LV from 0% to 1% and 1,5%, increased the activity micro particle probiotic against Salmonella typhimurium ATCC 14028.
