Abstract

The purpose of this study is to examine and assess the results of cutting broiler chickens sold in traditional markets and supermarkets in the city of Surabaya. Physical examination of chicken pieces is done by looking at the head to neck pieces of broiler chickens sold in traditional markets and supermarkets carried out to prove and ensure the slaughter is done properly so that the meat is fit for consumption. Head to neck sampling in this study was taken at traditional markets and supermarkets in five regions in Surabaya and then looked at the part of the slaughtering slaughtering of the trachea, esophagus, jugular veins and carotid arteries has been cut off all or not. Parts of the channel that have not been cut off are marked negative (-) and those that have been cut off are marked positive (+) with the tabulation model. The data of this study analyzed by Chi-Square. The results of this study concluded that 50% of the samples still did not meet the correct slaughtering requirements. Samples taken at traditional markets are still found imperfect slaughter, and at supermarkets the slaughter is done perfectly.
