Abstract

The aim of this research was to investigate effect of CaCl2 concentration and crosslinking time on physical characteristics and release profile of ovalbumin -alg inate microspheres. Calciu m chloride concentration (0.5 M and 1.5 M) and crosslinking time (30 minutes and 120 minutes) were used in this study. Resulting microspheres were characterised in terms of physical characteristic (particle size; shape and surface morphology), protein loading, entrapment efficiency, and yield. An independent T-test of experiment was undertaken as statistical analysis. At a 95% confidence interval, effect of calciu m ch loride concentration were showed on protein loading and entrapment efficiency. Effect of crosslinking time on protein loading, entrapment efficiency and yield were also indicated. Particle size was influenced by calciu m chloride concentration and crosslinking time. SEM examination showed that the microspheres using higher calcium chloride concentration showed almost spherical shape and smoother surface. Small particle size of ovalbu min -alg inate microsphere was produced using this ionotropic gelation-aerosolization method (5.49 μm to 35.37 μm). Ovalbu min release was not affected by concentrations of calciu m chloride.
