Abstract

In this research were made microspheres of ovalbumin-alginate using polymer of alginate and CaCl2. The aim of this research was to investigate effect of stirring speed on physical characteristics, protein loading, drug entrapment efficiency, and yield. Microspheres were prepared by aerosolization method. The microspheres production, aerosolization, has proportion of alginate-ovalbumin as 1:1 with alginate concentration 2.5%, concentration of CaCl2 0.5 M with stirring speed 30 minutes. Result showed that ovalbumin content for F1, F2, and F3 consecutively were 61,81% ± 1,73; 60,83% ± 6,29; 55,82% ± 4,57 while entrapment efficiency of ovalbumin for F1, F2, and F3 were 62,67 ± 10,55; 53,08 ± 6,05; 55.60 ± 4,45. Yield encapsulation were 50,59 ± 7,46; 43,60 ± 0,65; 49,81 ± 0,99. Based on statistical analysis, F counted < F table, it means there were no significanthy differences in three formulas. The particle size of formulas decreased by increasing stirring speed from 1000 rpm to 1500 rpm resulted size of 22,55 μm, 14,56 μm, and 11,97 μm for formula F1, F2, and F3. It can be concluded that by increasing stirring speed, the particle size was decreased and there were no significant differences for ovalbumin content in microspheres, entrapment efficiency and persentage of yield.
