Abstract

Background. Sensitivity of the gustatory system could be modulated by a number of short-term and long-term factors such as body mass, gender, age, local and systemic diseases and pathological processes, excessive alcohol drinking, drug dependence, smoking, composition of oral fluid, state of oral hygiene, consumption of some foods among many others. A few studies have demonstrated the effects of hunger and caloric satiety on sensitivity of the gustatory system in humans and animals. Purpose. The aim of the present study was to assess the effects of short-term caloric deprivation on recognition taste thresholds of healthy, non-smoking, non-drinking, non obese young female subjects. Method. Seven healthy female aged 20-25 years were recruited using the simple random sampling method. The inclusion criteria were normal body mass index (18-23 units), satisfactory state of oral hygiene, non-smoking and non-drinking. The subjects took their last meal between 3 am and 4 am, they missed a breakfast and lunch. Taste thresholds in hunger state and blood glucose level were measured between 6 pm and 7 pm, after 14 – 15 hours of fasting. Taste threshold and blood glucose level after food intake were measured, after two hour interval between food intake to measurements of taste thresholds and blood glucose level. Results. Recognition thresholds for sukrosa were significantly lower during fasting state than after a meal (P = 0,021 <α = 0,05). Conclusion. Sweet taste sensitivity increased at hunger condition.
