Abstract

Penelitian ini dilakukan untuk mengukur jumlah cemaran Coliform pada daging sapi yang di jual di beberapa pasar swalayan dan pasar tradisional daerah Surabaya. Penelitian dilakukan di laboratorium Kesehatan Masyarakat Veteriner Fakultas Kedokteran Hewan U Changes of beef quality can be affected by the level of bacterial contamination on beef. One of the bacteria that are used as indicators of hygiene sanitary is Coliform. The purpose of this research was to measure the amount of Coliform contamination on beef sold in some supermarkets and traditional markets in Surabaya. This research used eighteen beef sample taken from the three traditional markets and three supermarkets. For calculating the Coliform bacteria contamination, Most Probable Number (MPN) method was used. Results from this research showed there was a Coliform contamination levels in each beef sample that sold in some supermarkets and traditional markets in Surabaya. The average number of Coliform bacteria contamination on beef sold in the supermarket is 156 MPN/g sample, below in the traditional markets, 603 MPN/g sample.
