Abstract

The aims of this research is to determine the effect of bacteriocin on shrimp as biopreservative to decrease the total number of bacteria which stored at 4oC. This study uses three samples obtained from Karangmenjangan market, then given two treatments and examined on days 0, 2, 4, 6 and 8 by using the Total Plate Count (TPC) methode. The data are analyzed with split-plot design. The result of shrimp that dipping in bacteriocin for 5 minutes showed no significant (p>0,05). That was caused the bacteriocin activity was not tested before it was used so that there was any decreased activity from bacteriocin which was influenced by pH.
