Abstract

Background: Innovation of feed technology by modify feed composition could influence the broiler product. The treatment of crude fish oil, which is rich of omega 3, could increase the EPA of broiler meat. Fermented rice bran that was combined with crude fish oil in the broiler ration could increase the quality of broiler meat and performance of production. Objective: to study the effects of fermented rice bran by Enterobacter cloacae WPL 111 which combined with crude fish oil in the broiler ration on the quality of broiler meat and performance of production. Method: This research consisted of four stages, the aims on the first stage was identify ribosomal genes 16S DNA of the cellulolytic bacteria. The aims on the second stage to find out the optimum level of pH and temperature for bacterial growth and the cellulase enzyme activity of Enterobacter cloacae WPL 111. The aims on the third stage to find out the effect on the nutrient quality of fermented rice bran by Enterobacter cloacae WPL 111 as an inoculums of cellulolytic bacteria. The aims on the fourth stage to find out the effect of feed formulation which contains fermented rice bran combined with crude fish oils on the performance production of broiler. The data was obtained in the first and second stage were analyzed by the descriptive method. The data was obtained in the third and fourth stage were analyzed using the completely randomize design by one way analysis variant and the difference between treatment was tested by Duncan’s multiple range test. Results: The identification of cellulolytic bacteria by the sequence of ribosomal 16S-DNA and analyzed by phylogenetic tree was Enterobacter cloacae. The optimum level of cellulase enzyme was 2.106 U/ml, the activity of endoglucanase enzyme was 17.994 x 10-2U/ml, the activity of exoglucanase enzymes was 1.33 x 10-1 U/ml and the activity of cellobiase enzymes was 1.04 x 10-1 U/ml, the optimum temperature and optimum pH for bacterial growth was 35°C and pH 6. The treatment of Enterobacter cloacae WPL 111 in the fermentation process could decrease the level of crude fiber, cellulose and could increase the level of crude protein, AME and AMEn of rice bran. The effects of fermented rice bran by Enterobacter cloacae WPL 111 which combined with crude fish oil in the feed formulation could increase the feed consumption of dry matter, the feed consumption of crude protein, the digestibility of crude fiber, biological value, body weight gain, EPA, HDL, and length of villie ileum intestine and could decrease the feed consumption of crude fiber, cholesterol and LDL. Conclusion: The combination of fermented rice bran by Enterobacter cloacae WPL 111 at 10% and crude fish oil at 2% on the feed ration could increase the quality of meat and performance production of broiler
