Abstract

The aim of this research was to know the effect of addition the bay leaves extract (Eugenia polyantha) to beef’s contaminant number based on Total Plate Count (TPC). Samples which were part of Longissimus dorsi were bought from abattoir and they were divided into 60 pieces which of 5 grams per piece. The research method was completely randomized design by using five of ethanol extracts of bay leaves were configuration 0% (P0), 5% (P1), 10% (P2), 15% (P3) and Total plate count conducted on the 0 day (H0), 2 days (H2) and 4 days (H4). The obtained data were analyzed by ANOVA. The results showed that the bay leaves extract could reduce Total Plate Count (TPC) which was stored at 4°C for four days. The results showed that the significantly (p<0.05) of total plate count up to four days. In this research, the best obtained results in the treatment of bay leaves extract which used was (P3) 15%.
