Abstract

Nata is known as a kind of food which is rich of cellulose as a result of Acetobacter xylinum fermentation process On this research. Nata was tried to be use as a substrate in order to grow Bambusa Vulgans Schrad with Sacharomyces sere viceae functioned as a nitrogen and mineral source. This research aimed to study the behaviour of various concentrations of Sacharomyces which grown on Bambusa Vulgaris Schrad substrate on the Nata production The result will be based on which concentration of Sacharomyces will be used as the best starter, on a commercial p0.171 of view. Methods employed in this study was a laboratory experimental. Research design used was Completely Randomized Design, Consists of 4 treatments and 3 times repeated Results were analysed by F-test (5%). and continued with Least Significant Difference (LSD) when there is any significantly difference Results showed that Nata can be produced by the addition of Sacharomyces sereviceae In Bambusa Vulgaris Schrad substrate. Theres was a significant difference on each treatments of thickness and the weight of Nata . The best result was on the addition of 10% Sacharomyces sereviceae, while the worst on its addition of 0% Substrat Bambusa Vulgaris Schrad, Biofermentasi Acetobacter Xylinum.
