Abstract

Probiotics are living microorganisms that provide health benefits to the host when administered in adequate quantities. One of the most widely used probiotics is Lactobacillus casei. The minimum amount of probiotics to give effect to host effectively is 106 cfu/gram. Probiotics will be damaged at gastric juice (pH 2) whereas the target of action is intestine. Microencapsulation using suitable technique and matrix was needed as an efficient methods to protect probiotics from extreme condition in gastrointestinal tract and release them in intestine as the target organ. Lactobacillus casei was made into microparticles by spray drying at 110 °C inlet temperature with two different concentration of metacrylic acid copolymer L type as the matrix. Two different concentration was named formula I for 0,5% matrix concentration and formula II for 1,0% matrix concentration. The result showed that the increase of metacrylic acid copolymer L type concentration lead the greater protection in Lactobacillus casei when microencapsulation was occurred and both formulas were significantly different (p < 0,05).
