Abstract

This study was conducted to know the composition of Sumbawa milk horse in Surabaya. The first step of this research is to prepare 6 samples of Sumbawa milk horse from Surabaya and Nusa Tenggara Barat. Sumbawa milk horse conducted analysis organoleptis, reductase, density, alcohol, protein, fat and lactosa. The results analysis of Sumbawa milk horse to organoleptis is normal, reductase need more than 10 hour to reduction of methylen blue, alcohol showed negative and have average 1,25% fat, 0,99% protein and 3,53% lactosa. the results showed that composition of sumbawa milk horse in surabaya is below the standard.
