Abstract

The aim of this research is to find out whether ethanol extract of water hyacinth (Eichhornia crassipes) possess an anti protein denaturation effect on Bovine Serum Albumin as the screening media to antiinflammation substances on an in vitro research. The result show that water hyacinth ethanol extract possess an anti protein denaturation effect to Bovine Serum Albumin media with the lowest concentration of the extract which is 1 ppm were able to inhibit protein denaturation on the average number of 29,07%, 10 ppm on the average number of 47,22% and the highest extract concentration which able to inhibit the denaturation process on the average number of 60,84%. The IC50 of the water hyacinth ethanol ectract were calculated and determined as mush as 54%.
