Abstract

Manyung bone fish from waste production Jambal Roti can be processed into collagen that can increase the added value. This study aims to determine the effect of different concentrations of acetic acid and time of extraction on the characteristics of collagen produced. Collagen extraction was performed by immersion in acetic acid with three concentration variations 0.5; 0.75 and 1 M with 3 days and 5 days. Based on collagen characteristics it can be concluded that the use of acetic acid 0,5M with 5 days extraction time on collagen extraction from bone of lotung fish get best result that is the best rendement and moisture content 4,395% ± 0,168% and 6,275% ± 0,735% which fulfill requirement SNI, while ash content obtained 37,532% ± 2,417%.
