Abstract

Industri pengolahan ikan menghasilkan berbagai jenis produk hasil samping. Hasil samping berupa kerangka ikan memiliki potensi sebagai bahan baku pembuatan hidrolisat protein. Hidrolisat protein adalah hasil hidrolisis protein yang mengandung peptida dengan berat molekul lebih rendah dan asam amino bebas. Tujuan Praktik Kerja Lapang ini ialah mempelajari proses produksi hidrolisat protein dari kerangka ikan menggunakan hidrolisis termal
